I love holiday baking. It is a tradition I grew up with, as my mom filled our home with delicious Christmas treats for us to enjoy and to share with friends and neighbors. I have carried it on in my family and each year excitedly put my list together of what to make and who we will be giving away plates to. Some of our favorites are fudge, peanut blossoms, gingersnaps, and my husband’s favorite – peanut brittle. Another favorite is this chocolate pizza recipe I am about to share with you. It’s sort of a rocky road type of dessert, dressed up with red and green cherries for Christmas.
This is a fabulous recipe because it is really simple and quick to put together. It’s delicious and, I think, it is a really pretty Christmas treat to make. I love how it comes together. You can take it to a get-together and it will dress up any table. And you canmake it whatever size you want. You can create it on a full-size pizza pan, smaller platters, or you can make up a batch and create mini pizzas on holiday plates to give as gifts for teachers, neighbors, friends, whoever is on your list.

Microwave chocolate chips and almond bark for 2 minutes on high. Stir a few times. Microwave 1-2 minutes more until smooth. Stir two times every 30 seconds. Stir in marshmallows, Rice Krispies, and peanuts.
Pour onto greased 12″ pizza pan (or small plates). Top with red and green cherries. Sprinkle coconut flakes over the top. Microwave 2 oz almond bark and oil for 30 seconds to one minute until smooth. Drizzle over top. Refrigerate until firm.
